Had a pretty awful meal at Capital City Grill this weekend

Met a couple friends a CCG (downtown) on Saturday. It had been a while since I ate there last and I cam honestly say I'll never be going back.
Started with the chicken/andouille gumbo which the waitress told me was easily their best soup. What came to me was a bland, watery soup with crunchy rice.
Next came a salad with my meal. Just a basic dinner salad that was completely soaked in blue cheese dressing. Lettuce was soft and wilted.
I got the ribeye terrabone for my entree. 12oz ribeye topped with crabmeat and a taragon cream sauce. The entire meal was completely bland. The crabmeat was nonexistent. The steak was very rare which I normally don't have a problem with (I asked for med. rare) but it was very tough and stringy. The parmesan mashed potatoes were probably the best thing. The entire meal needed salt and pepper badly.
Only solid part of the meal were the two glasses of house cab.
Has this place completely fallen off? Or was this just a bad night?

Last time I ate there a couple months ago, the service was terrible. The food was unremarkable but not bad that I remember. I'd rather go somewhere else

I've never been there for dinner, only lunch, but have had good experiences every time.
It's probably been 4+ months ago since the last trip.

I usually only go there for lunch, and only get a burger or sandwich. The burger is good and lunch service is pretty timely. I don't go for dinner anymore because the few times I have it was pretty average.

Didn't their executive chef leave to head up Stroube's?
The food was extremely bland and sloppy. They are definitely lacking a competent executive chef

Last time I was there, it was over an hour before we got our food. Excuse was given that they were very busy. There were at least 10 empty tables. By far, more empty table than occupied. If that is "busy", what happens when the table are filled?

I used to frequent the sherwood location at lunch for a cup of gumbo and burger.... Pretty good lunch, imo.
Havent been n a while, so cant speak to that.
I have, however, claimed that CCG and Dempseys had BRs best gumbo.....and have noticed the inconsistancy at CCG.
Bummer to hear.

The gumbo I was served had an oil slick in it as it had become seperated from the roux. What causes this?
Was this gumbo old and just reheated?

Can be caused by adding stock too fast to the roux. Of couse if they have meats in the gumbo they can cause grease to float to the top and if not skimmed will do that as well.

This is most likely the cause. I'm sure it sits in a pan in a steam bath as most places do with their soups.

If the chicken was fatty and they didn't take the time to clean the chicken well and remove the fat before dropping the chicken in the stock, it can cause a greasy gumbo.

This is my extent. I take my kid when she has to be back at school for some function and I'll say this, they have the best french fries in the city bar none and do a good chicken tenders. Much better than Canes. And a decent enough selection of wine to allow me a glass or two while she studies and eats. Later afternoon.
