Grilled soft shells!

They look great. I need to give grilling them a shot one day since I usually just batter and fry them.

I was in a seafood shop in Slidell a couple weeks ago and they had beautiful, large soft shell crabs for $7 each and I passed but bought 1 1/2 dozen boiled to eat. They were very good and all males to boot.

We do ours in the toaster oven with roasted garlic and butter.

So do I, but the shop owner/also the guy who catches the crabs said the females were all kites, thus no females.

I swear im the only person in LA that feels this way but I can not bring myself to enjoy a soft-shell crab

Commander’s Palace cookbook written by Shannon I believe. Pretty sure they started it when Emeril was chef there. Easy to do and obviously easy to customize. Been doing this for 15 years. To my taste, infinitely better than commercially bottled.

3-5 min spin them 180 degrees halfway during that time and baste. Flip at 3-5 and repeat procedure

I think it’s mainly the texture and feeling like I’m eating parts of the crab that I’m not supposed to be eating

The only part would be the shell because the "face" and gills/lungs are removed.

Now, I might feel like you do if they aren't battered. The legs might be off-putting.

I means there was no meat in the crabs and they were light enough to make them into kites.

Basically how fishermen describe crabs with little to no meat in them.

I do soft shells with one of those basket grill accessories that allows for easy flippage and it works real good.
I like to impart some smoke too so I close the lid for about 20 minutes of indirect heat with smoke on a Weber or whatever you have.
I tried a seasoning with McCormack Montreal steak and it came out delicious
