I drove 3 hours round trip today to buy smoked sausage from Rod's in Church Point for my Christmas eve gumbo. Some things you just can't get at your local market.

Drove by the Down Home plant today on the way to Cousins Cajun Market in Stonewall.
Cousins owner lady is from Patterson in south La. Boudin balls were very good, shrimp fettuccini was excellent. Bought some of their boudin to try tomorrow.

New Orleans Smoked Sausage (Hogs for the Cause) or Tony Chachere's.
IMO, best non specialty meat market sausages out there.

Grew up on Manda. I like it the best in all my Cajun food. I buy bulk every time I come back to Baton Rouge.

Conecuh is greasy gump sausage unfit for a pot of anything. It imparts some weird flavor that dominates everything else and leaks more grease than the Exxon Valdez. It’s only usefulness is on a grill

Rabideauxs but if I’m out I’ll use Prasek here in H Town

Big fat juicy Mandas green onion.

Martins for dishes and Verons for the grill.

Either Richards or Veron’s

Yeah. I hate to criticize something that someone else likes but this sausage simply does not taste good to me in any way.
It’s also very fatty. I grilled some once and almost burned down the deck as grease started dripping all over and the grill caught on fire.

Garlic and Green Onion Sausage from Benoit's in Addis. Great for jambalaya also.

Manda gets shite on a lot in here, but I like that fatty countryish style sausage in my beans. Id rather other sausage if it is by itself or on a poboy.

Costco keeps this is stock. Use it in beans and gumbo religiously.
