NOMA I think while not totally meatless was doing vegetable and foraging heavy cuisine for awhile.

This is a thing in the high end culinary world and it isn't always political.

In some ways, it makes things a bit more interesting. Meat could be "easier" in that...well... it tastes awesome.

Much more difficult to make an all vegetable meal interesting enough to pay those prices.

pretty sure NOMA goes vegetable only every spring/summer

or at least they did at one point when they were allowed to be open...

they also did burgers last year during the shut down, so

Went look at their menu, and while it was in French, they still used cheeses and aren't fully vegan, the stated goal of where Humm wants to be.

I have no doubt a meatless menu is fine and tastes great, but a fully vegan menu seems like something not many people are dropping a few hundred dollars on.

Eleven Madison Park has always been one of those destination restaurants for people that visit NYC

so some baw from Houma might save up for his anniversary trip with his wife and Elevan Madison Park might have been their big anniversary dinner that they saved up for, but now do you think that baw is going to spend that money for vegetables? nah

Still going to have better good than 99.999% of restaurants in the world.

They’ll still be critically acclaimed

And they don’t need to impress a billion people. They’ll stay booked up they might lost a chunk of the waiting listed but they’ll put asses in seats.

I tjink It’s a little nonsense

Charging what they would for a plate fo food that leaves you hungry is the opposite of sustainable no matter what ingredients they use.

How many baws from Houma would:

1) Have even heard of Eleven Madison
2) Would spend 1000ish dollars on one meal
3) Would even set foot in NYC?

Glad we got to go in 2018. It was fantastic. But I’m dropping that kind of coin without getting some fois gras, bone marrow crusted tenderloin or something. I doubt their business suffers too much from this though. There’s a market

That reminds me of how excited I was to try this famous foie gras dish at Animal in Los Angeles last year, and then I found out California had just outlawed foie.

I know French Laundry (and assume Per Se too) has a vegetarian option on their tasting menu, in case there are some in a party who are vegetarians. And I'm sure it's very good. But it's AN option, not the ONLY option. And as others have expressed, at that price point, I'm not willing to pay that amount for a vegan or vegetarian meal. I want foie gras and caviar and kobe beef at that price point, not Brussels sprouts three ways.
