Forgot to plug in crock pot!
Beef brisket chunks in crock pot were seasoned and standing in water at 75 degrees, covered for 7 hours.
The marinade contains salt and vinegar and other spices.
Will the meat be safe if I proceed to cook for 10 hours?

I would think you will take it above 165 degrees for a few hours, that will kill anything,,,,I say give it a shot and see how it comes out,,,,either that or throw it in the trash

The water is the main issue. Had it been covered in fat I would say you’re good, but idk.

While it may kill anything, some bacteria release their toxin after being killed rather than during an infection. At least that’s what I remember from microbiology….decades ago

Pull it out of the crock pot and cook it in the oven or smoker at 275. It’ll be fine

I know you already tossed, but I would have pulled the meat out, rinsed it off and started over in the oven or crock. Cooking to 200 solves problems and your gut needs adventures now and then to stay resilient. The danger mostly lies in the cleanup of your crock pot and the water in it. Don't rub that in any open wounds, otherwise I'm still not scared. My kids bring nastier stuff home every day.

I had it once and that was enough for me to never want to risk it ever again. I had my arse on the toilet and my head in a 5 gallon bucket for 2 days, often at the same time.
I didn't experience those kinds of shits until I had my first colonoscopy and did the prep work, but that was only for part of one day.
