Easy Chicken Breast Recipes

Have a bunch of Chicken Breasts in the freezer. Tired of same old recipes. What are some quick and minimal ingredient recipes?

Rub two breasts with taco seasoning and throw them in the crock pot with your favorite jar of salsa for pulled chicken tacos.

Stuff with spinach and feta and bake.

I’ll pound them to an even thickness and blacken them in a shawarma spice blend:
2 tblsp paprika
1 tblsp cumin
1/2 tsp turmeric
1/2 tsp garlic powder
1/4 tsp cinnamon
A pinch of cayenne
S&P to taste

Baked Chicken Breast - the Kichn

This recipe makes the best baked chicken breasts and it's so simple. I avoided breasts for years because they were always dry unless I diced them beforehand. Not anymore.

We do something called hammered chicken. Basically flatten a chicken breast with a mallet (usually cover with wax paper when doing this part). Generously season with Montreal steak seasoning then grill.

My wife and I make "burrito bowls" every week with chicken breasts.

We make a rub of salt, pepper, chile-lime seasoning (from Trader Joes), cumin, cayenne pepper, smoked paprika, onion powder, garlic powder. Rub the chicken with the seasoning mix and bake at 425 for 10 minutes on each side.

Once the chicken is done, we slice it up and put it over quinoa (rice works too), beans (black or pinto), fajita veggies, pico de gallo, sour cream, and cilantro.

Makes for a delicious weekday meal that's fairly healthy.

I got a thing of some adobo seasoning from betr. I put the chicken breast with sliced up onion in a dish. Then I mix the adobo seasoning with vinegar and pour it over the chicken and onions, I make sure the chicken and onions are all covered with it. If you want, you could dilute the vinegar with water. Then just put it in the oven at 350.

Sous vide then. Go get a Joule. Relatively cheap. Can use ziploc bags for the submersion.

Butter, couple sprigs of thyme, few busted cloves of garlic, two chicken breasts salted. Cook to your preferred temperature inside (this process will allow for safe pasteurized medium temp chicken. Take out, pat dry, sear in pan for a crust. Can do the water bath part for a few breasts, then sear them throughout the week for dinner.

Chicken Tikka Masala is the real deal if you like Indian food.
Or you could do a butter chicken which is similar. Lots or recipes for both dishes on the www
Make sure you buy some naan to dip in the sauce

Or make your own. It's not difficult and tastes exponentially better than most store bought.

1. Kabobs. Cut in domino size pieces. Marinate in whatever you like for about 4 hours. I use Cavenders, a little italian dressing, black pepper, lemon and garlic. Then thread on skewers..pack it on there, like 20 pieces per skewer. Eat over salads, in pitas, or some cilantro rice.


2. Beat it out flat, season, lightly dredge in flour, pan fry in olive oil and butter. When done take out and put in warm oven. Then add some shallots or onion to pan and saute, add a little garlic, then hit it with what you like. You can add artichokes and mushrooms and green onion. You can add lemon and wine and capers.

If not saucy enough add a little butter if needed. Serve over pasta.

I do this and break out the George Foreman. Can have chicken for the week done in like a half hour.

Put the chicken breasts in a baking dish. Salt and pepper them a bit. Spread homemade or store bought pesto over each breast, generously. Top with sliced tomatoes with a little salt and pepper. Top those with slices of fresh mozzarella. Bake at about 375 until chicken is done. Drizzle top with balsamic glaze and add some fresh basil leaves chiffonade style, if desired. The drippings are delicious.

My mom used to make this all the time when I was a kid. Comes together pretty quick and you probably have all the other ingredients. You can serve it on toast or rice. It's also good for leftover chicken.

Here's a basic stir fry sauce. If you like Chinese food, you probably have most of the ingredients on hand. And it works with whatever veggies you have -- mushrooms, peppers, thin cut carrots, onions, green beans, squash, etc. Cook some rice and this is better than the take-out you would get from a strip mall Chinese place. I added a tablespoon of Sriracha and used Chinese black vinegar instead of cider vinegar.
