I have duel citizenship, when in NELA it's cornbread, when down here it's oyster.

Huge fan of both. But I'll always remember the first time l had oyster dressing on thanksgiving. Eye-opening experience.

Well my Catahoula Parish grandfather made oyster dressing with cornbread which is the recipe I use. He was pretty redneck. Well...he was real redneck.

He also had to find someone to bring him oysters from the south and most times he would freeze them since it was always early. Which is how I learned that oysters could indeed be frozen.

I’m not making it today but I believe I will for Christmas. My neighbor has a couple of sacks that he is shucking and charbroiling so I’ll pay him a visit for my fix later today.

The only way I eat oysters is raw on the halfshell. Cooked oysters are disgusting.
