I don't really have favorites now. I find myself cooking simpler and simpler things with fewer ingredients as I get older.

But when I was first getting into trying new things, I bought Julia's book "The way to cook" and it changed they way I thought about cooking - methods & techniques versus detailed recipes.

So I guess it would be Julia because of how it influenced the way I approached cooking.

One of the best under the radar chefs in the New Orleans area was Gerard Crozier. He owned Crozier's and later Chateaubriand on Carrollton. He merged authentic French with a touch of creole. His filet with bearnaise was one of the best dishes in the city. He died some years ago.

Shepherd has done a lot of good with Southern Smoke…but frick him for just up and leaving everything he had with Underbelly Hospitality.

The later years of Underbelly that then morphed into UBPreserv and what he had going on at 1/5 was great, the food and creativity at UB was phenomenal.

You should definitely check out Mooncusser at some point. The EC is Carl Dooley (who I listed as one of my favorites - I’m biased though as he is a friend).

He was actually on Top Chef the same season as Karen. I believe he came in 4th place. Really great guy and incredible chef.

Got me thinking of my younger days working for a food distributor in the Florida Parishes. early 80's...was in many kitchens, knew lots of talent, bantered with them and watched them prep and cook...
