Dishes that are better when not authentic?

Last night I had a cesar salad with actual anchovies, and holy hell I forgot how overpowering those things are. The whole damn salad tasted like it'd been doused in saltwater.

Any other dishes that are better when you don't make them as the authentic recipe would prescribe?

I guess it depends on your definition of authentic, but I like Americanized pizza (foldie NY slice) better than Neapolitan.

You crazy on the Caesar salad thing though. I had this one fresh muddled on a cart at one of the best restaurants I’ve been to, and it was incredible.

Most restaurant versions of barbecued shrimp are better than the original from Pasqual's Manale.

Omelets. I spent some time a couple years ago trying to perfect the classic French Jacque Pepin omelet. I got it down pretty good. Then I came to terms with the fact that I much prefer my American cheesy clusterfrick of an omelet that half the time ends up being scrambled eggs because of put too much stuff in them.

Anchovies are not in an authentic Caesar salad. The original recipe never used them.

Got made better...anchovies are awesome. (Worcestershire sauce has anchovies tho)

The muffelleta at Ryan’s deli in Hammond in is better than any of the ones I’ve had in New Orleans. It’s not authentic because it has roast beef and ham along with all the other traditional Italian meats and cheeses.

Alfredo Sauce.. Purists will insist it's only Parmesan cheese and butter, which is good but adding whipping cream, garlic, Italian seasoning and parsley flakes makes it better, especially if you're adding chicken.

Perhaps, but the OPs argument is that anchovies are in the authentic recipe (which they are not) and leaving them out (making it unauthentic) is better.

Ok, I have a question about this, because I don't know much about Shrimp Creole. I had some leftover seafood stock and wanted to use it up, so I came across a recipe for Shrimp Creole on a random website. The recipe looked like it was modified without mentioning what was different than traditional Shrimp Creole, and since I never grew up with it I had no clue what it was supposed to look or taste like.

I thought the end product was tasty and would make again, but I have no frame of reference. This is in addition to the trinity, shrimp, and seasoning.

Could I call what I made Shrimp Creole or am I missing/adding anything which makes it something completely different?

Corn tortilla, protein, cilantro, onions, lime, and hot sauce. That’s a taco.

Texturally, corn tortillas are terrible
