Picked one up today from the local butcher. It’s well marbled. I’ve never cooked or eaten one before. I haven’t used the old sous vide in a while. Thought I might warm this thing up to 115 for an hour then sear it to see how it does.

Any suggestions?

Great cut. It's our preferred buffet style Chuck primal. Not the best option to serve as a stand alone steak but it will certainly work for that too.

Good if you don't overcook it. Sous Vide is a good way to do them.

As stated above.

Do not eat as a stand alone steak and do not over cook.

The first time I wasted good money on that shite not knowing what I had. The second time i seared one over real wood fire and cut it up and made steak tips in gravy with mushrooms and onions. Was quite tasty.

I bought one today for the first time. Everything online says as flavorful and tender as a ribeye. Key I think is cutting it against the grain and not over cooking. $9.99 a lb caught my attention. Will let you know how it goes.

Is this not for all cuts of beef?

My ex wife let my daughter open an Amazon box with a Messermeister steak knife. Well, they're not my knives anymore, so I guess more

Why? Good cut if you cook it fast to medium rare. Similar to a ribeye without the cap.

Had 2 8oz Denver Steaks last night, salt and pepper, grilled 2 minutes on each side, cut thin, made tacos with slaw and cilantro crema, really good

Then you are correct...this is not a good stand-alone steak for you.

For most people, however, it's really good if properly prepared.

Go buy a twin pack of Chuck Roast at Sam's and you can cut your Denver out of that for cheaper than $9.99 (if that's an issue for you)
