Yep. They stay hotter much longer than dumping them on the table (it what most boiling places do). And we went from using plastic trays to disposable so we don't have to clean them. They hold up really well and you really only need 1 per person no matter how much crawfish they eat:

Grocery stores around here always have racks of various free advertising papers by the front doors, not the local newspaper that's for sale.

A large roll of absorbent brown paper taped to the table then line with newspaper. When finished, untape the brown paper, roll the newspaper up in it and stuff in a contractor bag.

I use black plastic sheeting from lowes / home depot, with the edges taped under the table. It does not blow around like newspaper does. I've never had an issue with liquid getting onto peoples clothes from runoff. It doesn't get soggy like newspaper, and you can easily wipe it down with paper towels between batches. It also makes cleanup easy, as you just roll it up and throw in the garbage, all in one piece.

Body shop masking paper for painting cars. We buy the 3 foot roll and it lasts forever. I think there's 500 feet on the roll.

My lovely wife uses dollar store plastic table covers and I put down brown food grade roll paper on top of that. When you're done eating, pull up the corners, roll into a ball and dump in the garbage. No mess, no drips and the table is dry.

we have white tablesvwith a plastic tablecloth on top...and then round trays for serving...

I haven't used newspaper in 20 years. After I boil them I put them in an ice chest with a scoop and you serve yourself in a crawfish tray, get you some sides and drink and sit down and eat. I noticed if you pour them out on the table people eat a lot more.

Just get some of these trays.

Craft paper roll from Lowes (the kind that people lay on new flooring while still under construction). They are near the paint section.

Plastic tables, spray water on top, put down 6mil plastic visqeen on top and the water keeps the visqueen suctioned to the table unless there are really heavy winds. Cleanup consist of dumping the visqueen in the trash and a quick wipe with a towel. This is the fastest way I've found if you set up bunch of tables.

Just toss the newspapers in your crawfish pot for storage. She will never even see them.

Just buy a roll of drop cloth paper, it will last years worth of boils.

Seafood trays - basically a round serving tray - is more of what I have seen the last few years. People get what they want in a tray and have a center tray or two for shells.
An easy way to the put all the shells in the designated garbage can/bag facilitating a quick clean up. Now you have to clean all the trays you use, but honestly it is pretty simple to suds them up and wash them down when I'm cleaning the pot, basket, etc.
