Cooking on Griddles

Anyone into griddle cooking? I use my blackstone more than any other outdoor cooking item. (Green egg, gas grill, traeger, blackstone)

My typical cook is a 2# or 3# package of bacon, followed by smashburgers and sliced Conecuh sausage, and then a batch of fried rice with eggs, bacon, broccoli and asparagus (if I have it) mixed in. Have a batch of onions and jalapeños going on the other half. We'll eat on it for a couple of days.
It's usually about a six-pack cook, which is one of the best things about a griddle session. Still waiting for one of my kids to volunteer to clean the griddle for me.

I am just starting to get into using a griddle. Actually we've had one for years, it is a griddle top that came with our range. We've had it for 15 years and never used it. Since using a griddle has become the new rage I decided to give it a try, grandkids were staying over so I decided to cook breakfast on it. This one that came with the range just covers 2 burners and goes north-south. I'd prefer one that goes east-west. This one is also made from cast aluminum and it is non-stick. I guess that to make it easy for the wife to handle. It did a good job with breakfast. I was able to cook all the eggs at once, the bacon, and the sausage. It was really great for pancakes, but it is just to small and not configured the way I'd like. So, I got a large stove top griddle from Camp Chef. It will sit on my range just fine, and I can use it in the east/west direction. It covers 3 burners giving me more temperature control. It is also cast iron, so I can use some real stainless griddle tools! Now I am seeing what everyone is raving about! I love this thing! So much so that I bought the Members Mark 36 inch griddle from Sam's to go in my outdoor kitchen. So far I have no recipes I can call my own, but give me some time! I have an asian foreign exchange student in the family and she can cook! I'll be getting lessons from her this summer, then I'll share some recipes!

i did a griddle jambalaya that was fantastic this week. just got my blackstone last week though so i'm not the source for recipes

Get the 360 XL. I have it and after using it a but I couldn't imagine using a 22 inch one. It's wonderful

I love griddle cooking, so much can be done on them. Breakfast being our favorite... I absolutely despised cleaning the Blackstone to where it was a chore, we stopped using it so much. Then I found that Pit Boss makes one that has a ceramic top, this thing is a game changer! All you have to do is wipe it down with a napkin and you're done. No scraping or oiling or rust. Highly recommend, we said the hell with the Blackstone and sold it.

Just bought a 36 Blackstone a few weeks and love it. I have cooked fried rice w veggies, smash burgers, and grilled fish on it a couple times. Haven't had a chance to cook breakfast on it yet but looking forward to it.
I used this chick's recipe for fried rice. Winged the smash burgers and grilled fish as they arent rocket science.

If you guys like fried rice grab yourself some ABC sweet soy (Amazon).
I had a buddy who married a Filipino and brought a dish called pancit years ago.
My version:
In a pot pour a 32oz box of chicken broth and add 2 tbs soy and 2 tbs oyster sauce and bring to a simmer. Add in one bag of Bihon rice noodles. In approx 12 minutes the entire pot of broth will be absorbed by the noodles. Turn off and set aside covered.
On the blackstone throw down some spicy jimmy dean style sausage and a couple chopped onions, minced garlic, sliced jalapeños and mushrooms. Once browned slide to the side . Next put on a bag of shredded carrots, bag of coleslaw, few stalks of sliced celery. Mix and let fry for a couple minutes then mix the meat together. Lastly add the noodles and mix.
I like serving in a bowl with some sweet Thai chili sauce.
My little dog goes crazy when it smells me cooking this stuff. (It’s a good thing

Forgot about those, my parents and grandparents both had them on their stoves. We never used either because griddles are such a mess. It's not just about cleaning the griddle as it is about all the junk that falls off. Also I remember mom's 14"x14" griddle and nana's 6"x12" griddle, man that 36" blackstone is amazing. Make all the mess I want, scrape it off on the floor, hose off.

So far every sunday I get a jug of Guidry's (the chopped onions and peppers etc...) and a few bags of simply potatoes. Some days I also get a pound or two of the cheap beef tips and sear them up real quick and put them in as well.
We've also made plenty of philly steak sandwiches, smashed cinnamon rolls, and more. Last week I made sausage and peppers in a lodge skillet on the stove, that's going to be a headliner on the griddle next week.
Also check out Costco Bulgogi, which is basicaly thinly sliced and marinated beef. Dump it on the griddle and put the finished product on french bread sections.

Add breakfast, cheesesteaks, and fajitas, and I agree. But my friend has one and uses it at least once a week. I’ve been hesitant to bug one because I’m just not sure how often I’d use it.

tadman - out of curiosity, why do the sausage and peppers in a skillet on the griddle and not just directly on the griddle??

I use it all the time for blackened fish or chicken. I hate doing that shite in the house, it makes everything STINK. But the griddle is outside, the weather is nice, put on an Astros game and do some asparagus/broccoli/peppers and onions/tomatoes and okra on one side and blackened protein on the other and me and the wife (no pics) are eatin' good.
