Cajun home cooking that never makes it to restaurant menus

Bayou or prairie, I don't care. I'm talking about the homestyle stuff that will never make it to a restaurant menu, but sustains us anyway. My start to the list:
--petits pois or baby green limas cooked in a roux, with or without some chicken thighs cooked in the pot too
--smothered potatoes (if you have to ask....)
--shrimp boulettes (ground shrimp & shredded potatoes, seasonings, deep fried)
--etouffee de macaroni (a seafood etouffee, but with short pasta shapes cooked in the stew, not boiled separately)
--couche-couche, with Steen's cane syrup
--a slice of hogshead cheese melted atop a bowl of hot grits
What'cha got?

Shrimp molds - more of a holiday appetizer but I love it and have never seen it in a restaurant.

Pork roast with a couenne (quenne) and rice and gravy. I know people do pork roast often but never can get a proper couenne.
The Pig Stand in Ville Platte used to have a plate lunch with this dish. It was delicious, too bad it's gone forever.

All the old New Orleans neighborhood restaurants seem to have these as sides on daily specials. Hell, I think even places like Galatoires used to serve them.

I made it a few times this summer. I love them also. Now, I'm thinking of making one for the AL game with some other things.
