Never ate roux peas and I grew up south of Houma. Must be a regional thing. Now shrimp boulettes and a side of white beans... that’s some fine eating

Might have to make some roux peas sounds good

Pork Roast with Couenne

A seven pound pork roast with skin. Any idea where to find one around New Orleans or do I have to get it around Lafayette?

Best place to look for a skin on pork roast in NO area is Hong Kong market on Behrman Hwy. HKM sells plenty of skin on pork.

Hope that’s not Chinese Pork. A meat market/butcher should have it or can cut it if they have pigs hanging in the cooler.

You aren’t getting Pork from China but Smithfield is owned by WH Group which is from China and they own a huge amount of American farmland.

You do get a lot of Mexican beef and pork in the United States since we are free trade with them and a lot of US beef and pork makes it into Mexico.
