I like to take the boudin out of the casing, make it into a patty, then pan fry it up a bit with bacon grease. Then eat it with eggs.

We take the casing off the boudin and form it into a patty. Sautée both sides, top with a poached egg and hollandaise sauce.

It's awesome.

Thats it right there.... I cook the egg on top of the boudin kind of like Corned beef hash and eggs.

Boudin dip smeared on biscuits.

Deer sausage and cheesy eggs in the middle.

Add Hog head cheese and let melt in grits, then boudin, then eggs over easy. Might be the greatest food ever.

I do mine a little differently from most on here. Leave in casing and fry it kinda gently on as many “sides” as you can make contact with the cast iron skillet, using a little oil/butter. Crisps the skin alot like grilling. Occasionally have one bust, but it’s pretty rare if I do my part and not cook it too hot or let it stick. No big loss if it does, gonna eat all those crispy bits of deliciousness anyway. Man that’s some good shite with a runny yolk fried egg and a cathead and maybe some head cheese melted over hot grits. Slug of bourbon in your coffee and suddenly God is in His Heaven and all is right in the world for a little while.

I do this and then put it in an omelet.

If you have an address and don't mind paying an arm and a leg, you can get boudin.
