Take boudin out of casing place in frying pan press smooth. create openings in boudin and drop eggs in them. Cover and wait till eggs are cooked.

You will start to see a white haze begin at the bottom of yoke which is over easy, white haze 1/2 way up the yoke over medium.

We never did this until a couple of years ago. Now any time we buy boudin a few extra links are purchased just for breakfast.

I've looked into it as well and wasn't willing to pay the shipping fee. It's not an easy thing to find if you aren't near LA. I actually found some at an Aldi here in SC last year. It wasn't nearly as good as what my friends bring back from LA, but it was better than nothing. I bought all that they had and froze it. Unfortunately, I haven't seen it again in that store.

If you're in ATL, you might be able to find it at a specialty meat/butcher's market. I'd check the Dekalb Farmer's Market. You may get lucky.

I am actually putting together a video about how i make mine. It does have a good bit of steps, but not impossible to make at home.

We do the same. We like to make it like a Benedict. We do a biscuit cut in half, with the boudin patty and poached egg on top, cover with hollandaise.

Go to Bourques in port barre.

All the meats in Boudin blinded into a paste. Sometimes with cream cheese.

Sometimes with fatty liver so it's almoat like pâté.

It is outstanding.
