Hot crawfish are the best.
Cold crawfish are better than no crawfish.

I always try to save some to peel for for a dish, but end up eating them while peeling. On the rare occasion I get a whole bowl full, they never make it to a dish because I just eat them.

I have made crawfish salad the next day (kinda like a shrimp salad).

If I have them leftover I always shell out a few and make an awesome omelet the next day. Add some onions, peppers, jalapenos tomatoes and they are delicious.

I dont like to throw food away and can usually find a way to make "leftovers" appealing.

We had a whole sack leftover once when a bunch of people bailed at the last minute on a trip to the camp. Boiled it and tried to peel and just save the tails. This ended up being me drinking beer and slowly eating about 30 lbs of crawfish over the next several hours. I cant peel and not eat it

My dad has a couple of crawfish ponds. When he boils there are always leftovers. We were raised to not waste any food. The leftovers go in the walk in cooler and will be for supper during the week. I've eaten so much crawfish in my life that I am beginning to despise them.

I accidentally poured a fresh batch into a YETI once.

after we chipped the fresh ice off we had no choice but to eat them.

What you can do with the ones peeled. Get some french bread, put the, on top of the french bread, put cheese of choice on top, put it in the oven for a little while to get the bread kind of crispy and the cheese melted over the crawfish.. And make yourself some crawfish bread. That's good.

I rather them cold to be honest. No juice running down your arm and the fat is more congealed!

I eat them steaming hot and all day the day they were boiled. Anytime after that they will be added to a dish. Usually Etouffee but I dont discriminate.

Me and bigberg are on the same page. Whatever is leftover goes into the fridge. If they aren't snacked away that night, they get peeled the next day...usually to keep the tails for a later use. And depending how hungry the peeler is, most times they'll get eaten right then.

We had one tray left off of 125lbs on Good Friday. My wife peeled them the next day and put them in a tupperware in the icebox for me to vacuum-pack. Well my daughter found them and knocked out about half the tails.
