Maybe to your palate and that is all you know. But, it is really just mediocre boudin overloaded with MSG and not much liver. Boudin without liver is not boudin. You do know MSG is a flavor enhancer and it is hides other flavors. Where is the parsley, onion tops in Billy’s? You get the MSG pop, but no other flavors to me. The store in Opelousas is absolutely filthy and gross. Word is that Billy does not even eat boudin!
If that is all you know, then go for it. You should try sampling other boudins. A good boudin will hold its flavors at room temperature.
As far as cheese in boudin, no thank you. They don’t belong together. Now, a good cheese on cracker, yes.
Like others on here, there is much better boudin than Billy’s.

I’ll agree with this, but if you just go one mile North on I-49, you can stop at the gas station Billy’s with practically no line.

It is damn good boudin, but I’d go to Nunu’s or Kartcher’s before the Scott Billy’s line.

Bosco’s on Hwy 190 between Opelousas and Port Barre puts out a quality boudin as good or better than many.

And, the jalapeño boudin popper at Kartchner’s is a game changer.

Overrated? Maybe. My biggest issue with Billy’s is that it takes an hour anytime you go to get anything. Billy’s is at least consistent.

Best Stop, Nu-Nu’s are also solid around those parts. Nu-nu’s is my go to. Mowata store also has solid boudin if I’m in a rush or it’s early morning but I’m not certain they make their own.

They do have fried boudin balls, regular and pepper jack. I think their boudin balls and smoked boudin is pretty damn good, especially their smoked boudin. I never stepped foot in Duckroost till a few years ago. Use to go get crawfish from there when it was Martinez Seafood.

I got the smoked boudin from Billy’s, and it was ok. Billy’s crawfish boudin balls are pretty good.
