For what you're seeking, Parkway would be my recommendation.
I moved to Houston 4 years ago so some things have probably changed a bit but my absolute favorite single sandwiches around town would probably go something like this, in no particular order.
Meatball -- World Deli in Metry. Kudos go to Coffee Rani's sandwich on Ciabatta if you find yourself on the North shore.
Roast Beef -- R&O's but I hear this has lost some quality recently so I'd probably lean to Parkway, Sammy's, World Deli, and I wish the old Parasol's was still a possibility(though I was always shitfaced when I ate there)
Shrimp -- Zimmerman's in Gentilly, Bevi, Parkway, Radosta's in Old Metairie, then World Deli
Oyster -- Zimmerman's Bevi, Radosta's(bonus points for the buffalo oyster poboy but it's too rich to eat an entire sandwich)
I should also state that I haven't had every sandwich at every place so this list could easily change with some more experience, I'm by no means an expert.

I honestly don't get the love for Bear's. If I remember correctly, their Roast Beef is served with a really thin, watery jus. No real gravy and it made for a quick soggy mess. Am I remembering it wrong or is that what people like about it?

Bear's is ok but the beef is too thin for my liking. R&O's is my favorite roast beef.

It's debris style. It's the most tender I've had and is one of the best seasoned. Yea, it's sloppy. Is there any other way?

I'm all about the sloppy. To me, a good Po-Boy is one with good bread like Leidenheimer, Bevi or R&O's, even Bahn Mi bagueetes with just the right combination of your meat of choice, mayo, lettuce, tomato, and possibly some pickle. I find the gravy with Bear's just eats through the Mayo and destroys the bread too fast and doesn't mix with the Mayo the way I like. It's tender because it's sliced as thin as a slicer can do it. I also don't feel like it's really a debris because I think the jus would be thicker, darker, and more flavorful. I tend to think that a good roast beef could be made with just the gravy and the mix I described above, no meat. To each their own, there's many more I'd prefer than Bear's but I know it's popular and probably shouldn't argue too much otherwise...

He asked about the best piboys. I don't consider the poboys to be "classic". The restaurant is an institution. I agree with that. I wouldn't go there again unless I had to go with someone.

the "best" roast beef poboy is so subjective it's not possible to get consensus
my favorite is R&Os as its the best combo of bread, beef, gravy, condiments and fun place to eat, plus I can switch it up and get some red gravy on it
it just depends on what you like

They created the debris poboy. Again it is no longer good and I wouldn't recommend visiting, but to say it isn't a classic with respect to poboys is just false.

Everyone gave you solid advice, but I'll add Verti Mart as well. It may not be as traditional as the others listed here. But nothing beats grabbing an All That Jazz or fried chicken sandwich and walking through the French Quarter on a nice day.

I was one of the old guys who defended Mandina's, no more. The last 2 trips were disasters.
