Best fried rice in BR?

i find chinese fried rice isnt fried. I like Japanese fried rice. So much so i learned how to cook it.

key is old rice. cook the rice a day or 2 before hand and keep in the fridge. It needs to be rather dried out. Then cook it how you see them do it at hibachi restaurants. Put rice in skillet or a flattop and add onion and carrot shavings on top. pour some water in an let it steam/rehydrate a bit. They put a ton of butter in there as well. Stir every so often. I like a lot of egg in mine. Salt and pepper, and when the rice is basically cooked, add teriyaki and soy sauce to your liking, and cook unte the sauce is reduced a bit, then serve.
The flat top is great because you can move to different temp zones. with a pan you will need to watch the temp carefully not to burn the rice. but the major key is the old rice.

Alex the french cooking guy is actually doing a good series on it right now using the Cantonese method.

On old hammond yes, but bluebonnet makes it differently and I don't care for it.
