Didnt have much to do today so I decided to make a gumbo.
I bought a roteisseri chicken, deboned it and cooked bones in with the trinity for 2 hours
little salt, pepper, garlic, tonys... thats about it.
I season by taste so I dont have measurements.

Looks good! How sweet does it make the roux?

You eat the peppers, or just put them in there as a garnish?

I grew those peppers..
For garnish on this but they arent terribly hot, cook with them often.

Pb doesn't make it sweet..hard to explain.
Good stuff though.

I got a feeling your gumbo is gonna get shredded. And not cause of the peanut butter.

At least his looks like a soup instead of a stew. I would love to try it someday.

When I read peanut butter roux, I thought you were describing the color. When I saw the scoop of peanut butter going into the roux, my heart skipped a beat.

Where did you hear of that?

I'm intrigued.

I also really like the peanuts on your counter next to your peanut butter roux on your 5th pic.

I've given my cayenne plant a break for the winter. All the cold rain we've been getting in Baton Rouge was giving it fits.

Same here. I know there are debates about what is considered a gumbo (especially with that okra fanatic). But can i safely say that adding peanut butter might be a good way to discount this as a gumbo?

Seems unnatural. Crime against nature.

Very interesting. Do you taste the peanut butter in the final product?

Not really but sorta.
You just have to try it or yourself and see.
I know that sounds stupid but I'm a fan.

The term "peanut butter" roux means the color when cooked, not putting PB in the roux.

No, that's not really what it means at all.
