I don’t mean to be sacrilegious, but Conecuh is the only sausage going in my gumbo

It’s perfect. And the size of it works well in gumbo.

Conecuh has to be the saltiest/fatty sausage on the market, no thanks. Jacob's andouille is a million x better.

I enjoy conecuh on a sausage/white bread sandwich, but I never use it in gumbo/jambalaya/red beans/etc…. While the flavor of conecuh isn’t unpleasant, it overpowers pretty much any dish you put it in.

FTR, I like Conecuh on the grill. Wouldn’t put it in my gumbo tho. But that’s just me.

I like it but its flavor profile doesn’t go with gumbo at all. Too “sweet”

Nah, if you live in a town without a specialty meat place, it's pretty damn good for gumbo and red beans.
