Hear me out. The first lab BBQ in almost 2 years, so I am psyched.

However, I picked-up two trainees that are vegetarian. We'll have some baked beans and a salad for them, but I've been looking into smoking options.

The Great Google suggests tofu and Jack Fruit.

Anyone have any experience/advice on these or other suggestions?

i dont know about smoked, but jack fruit is suppose to be a really good substitute to pulled pork. i think most recipes do it stove top or in oven

Not really smoking, but I love grilling corn on the cob with butter and tajin on it. I have to keep myself from eating over two cobs

I've done tons of veggies on my rectec and they come out great - onions, mushrooms, zucchini, eggplant, peppers, carrots....you could put pretty much anything on there. I think you could impart some good favor to tofu if you grilled it. I don't know jack about Jack Fruit, so I can't comment on that one.

You could always ask them. Not trying to be a smart arse, I’m serious. It will be the easiest thing to do. They will more than likely rather get what they like vs hoping someone can guess what they like.

You could get some lab created sausage or burgers. I've been messing around with jackfruit but I'm not sold on it. Tofu needs a sauce for flavor and you need to read how to prep it for good results. All the veggie suggestions are good but like the previous poster said, ask them.

Smoked eggplant dip (think babaghanoush but smoke the eggplant) or a grilled corn salad with a red wine vinegar type dressing like below but leave out the bacon obviously.
Charred corn salad

I did some cooking for an "After the wedding, next day get-together" and my brother-in-law asked me to cook some all vegetable kebabs he had made the night before.

They were comprised of onion, different color bell peppers, mushrooms, pineapple, zucchini and yellow squash and cherry tomatoes.

I love grilled vegetables and do them fresh from my garden and one of my favorites is grilled okra, but I also grill squash, broccoli, green beans, Brussel sprouts, eggplant, etc.

I tried it once. Once. That’s the nastiest garbage ever. It’s not just bad it’s terrible.

most baked beans have pork a chunk off pork fat in them or flavoring added to them so watch for that.

bbq pineapple is great but it depends on what they like. in cases like this its best to include them in offering suggestions on what they would like on the menu
