For the first time Sunday. I was actually surprised how good it was if prepared correctly

Yeah they say to keep them alive till cleaning. Knock them out and filet. Then to an ice water bath with a little salt. Then batter and fry

You can also poach them a bit and freeze them.

I used choupique a few times cleaned and boiled in some seafood boil seasoning, then picked to make fish cakes and they came out great.

Best way is to keep alive! hit in the head with a hammer!
