Need a dip for boudin egg rolls

Yesterday, I made about 20 lbs of boudin, and I didn’t cause up about 5 lbs of it for boudin balls and egg rolls.
The egg rolls are awesome but need a dip, kind of like the dip that comes with The Chimes fried alligator.

Who has a good recipe?

No you don't need one, but just use a coarse mustard

I usually just heat up some pepper jelly in the microwave to soften it some. Maybe a little butter with it before heating but you def don’t need it. The jelly is great solo.

Edit - The Chimes sauce is horseradish sauce. This’ll get ya close.

The sauce that's served with Korean pancakes might be good with it.

1/4 cup soy sauce
4 tablespoons rice vinegar
1 tablespoon toasted sesame seeds
2 teaspoons sesame oil (optional)
2 cloves of garlic, minced
1 green onion, minced
1 sliced Thai or serrano or jalapeño pepper (depends on how hot you want it) optional 1 teaspoon crushed red pepper flakes instead
Sugar or honey to taste

Pork pairs well with fruit-based stuff.

From my bad memory: Morel's up in New Roads rocked my world years ago with an orange marmalade sauce.

Looks like this is a close recipe.

I always use the mustard sauce that Ruffino’s uses with their shrimp corndogs that was posted here years ago. It’s always a massive hit, and compliments the egg roll very well.

Mustard Sauce
Ingredients
• 1 tablespoon Colman's dry mustard
• 1 cups mayonnaise
• 2 teaspoons Worcestershire
• 1 teaspoon sea salt
• ½ teaspoon Tabasco
• 6 ounces Dijon mustard
• ½ tablespoons lemon juice
• ½ tablespoons A.1. steak sauce
Directions
Combine all ingredients together in a mixing bowl and blend well.

I made some habenaro/serano/jalapeño/garlic jelly that is ideal for this application

I don't measure this but it's not difficult.

In a small saucepan put like half a cup of pepper jelly in over lower heat and begin to melt down. Add plain water or apple juice to thin and when syrupy like it's ready to use. You can add red pepper flakes if you want more heat. That's it! Enjoy!
