What kind of pie(s) would be best to bring to an office of mostly girls? I personally like lemon meringue pie a lot but a lot of people seem to like key lime pie. Maybe pecan pie?

Thoughts?

It’s hot, so go with a cool, summery pie like key lime or lemon icebox. Bonus is that neither one requires a traditional pie crust, so they’re easier to make.

Your office is having a potluck or shared food during Corona? Seems like a great idea

Blueberry lemon icebox pie

1 shortbread pie crust

Soften a block of cream cheese in a stand up mixer, add 1 1/4 cup powdered sugar and mix well, add juice and zest of 1-2 lemons and mix well, add tub of cool whip (extra creamy) and mix well, fold in 2+ cups fresh blueberries and pour in shell, freeze overnight then put in fridge

A great cool pie for the summer

I always think the most traditional will go over well. Apple, cherry are good choices. I would think everyone likes those but I guess the cold pies are a good idea with the heat/humidity

If you have access to fresh figs I'd suggest the fig and brown butter pie/tart that Donald Link has in his Down South cookbook.

My wife made one recently...fricking phenomenal.
