What's Secret to Boiling Spicy Shrimp?

Family loves having really seasoned, spicy boiled shrimp. Can't ever seem to get enough season into them. What the secret?

Put unpeeled shrimp in ice chest, dump in spicy seasoning, shake vigorously.

Shrimp take a very short time to cook. The key is to boil them for just a minute and then ice down the water to stop the cooking process and then let them soak as long as you want.

Overseason the water. Increased soak time will overcook the shrimp, even if you cool the water. I'm a texture nazi when it comes to shrimp. It's not as important to others though.

I like my shrimp on the not so seasoned spicy side. I like the sweetness of some fresh Brown Inshore shrimp from Lake Boydreaux.
Whenever I do want them spicy for 10 pounds of shrimp I use a whole package of Chackbay seasoning.... ETA..... forgot to add half a small bottle of liquid.

Another fan of season heavily, throw shrimp in boiling water, wait maybe a minute until they turn pink, and then put in enough ice to stop the cooking. Soak about 15 minutes. Taste. Soak more as needed.

One of my guilty pleasures is to put a couple quarts of water in a gumbo pot and add a cup of zatarans crab boil. Cut up a link of Richards sausage very thin slices and boil them for a few minutes in the crab boil. I will then kill the heat and drop in a couple handfuls of peeled deveined shrimp. About thirty seconds later, put a couple of frozen corn on the cobs. Let the whole thing sit for about 10 minutes. Strain it and make a dip out of crab boil and vinegar.
That is the real deal!! The vinegar sets the flavor off!!
