I figured Shmi would have been a little more confused or been paraded around as a medical experiment considering she was the first virgin birth ever.
The Sidious stuff wasn't really explained, but Anakin being a product of the Force was.

In episode 1, they said that Anakin had no father and that he was born from the force. In episode 3 Palpatine tells Anakin that Plagueis can manipulate the force to create life. Its implied and highly logical that Plagueis could have and probably created Anakin, bringing balance to the force. With that being said, we know that Luke was around when Emporer Palpatine and Darth Vader died, so the only way for there to be balance is if there were another Sith lord somewhere to balance the dark and the light. It would also be appropriate that Darth Plagueis would have created Anakin knowing full well of the implication that he would kill Palpatine and bring balance to the force, there for creating not only a power vacuum for him to come in and run sh*t but also serve up some revenge for Palpatines assassination attempt.

So we should expect the revelation in the next movie will be Plageius telling Rey that "I am your great-grandfather....or something like that."
What did the Jedi think "bringing balance to the Force" meant? Simply eliminating the Sith? When they adopted Anakin, they weren't aware that the Sith had returned.

Well, technically we don't know that Plageius created Anakin. It is hinted at, but it is not a definitive position. Sure it is possible, maybe even probable, but Palpatine's whole reason for telling Anakin about him was to entice him about helping save Padme.

The prophecy was made long before Anakin iirc. Obviously they misinterpreted it, as mentioned by Yoda. They knew once they adopted him that there was possibly a Sith plot. So, in their mind if the Sith grew in power, the force would be unbalanced again, so the Chosen One at that point would help put a stop to it. It goes back to one of the original themes Obi Wan taught Luke, that your point of view drastically changes your opinion of the same information. The Jedi viewed a balanced force meaning no turmoil and no evil. The Sith did the same. Both did not understand the prophecy.

The Jedi saw bringing balance to the force as basically wiping out the sith.
The Jedi believed that the light side of the force was the true nature of the force and the dark side of the force was just a perversion of the natural state. So they believed that Anakin would wipe out the sith and then there would be no dark side... This is my interpretation that I back with no evidence.

I always thought the "Rule of Two" only inferred that Siths hang out in pairs, a Master and an Apprentice...Not that only two exist at a time in the galaxy.

The rule of 2 only applied to the Sith. I was just throwing that in as if we are talking true balance, the rule of 2 would be universal. If there are 2 Sith, then balance would be 2 Jedi. Not that that is an actual position in the canon, it's just another way to interpret the prophecy.

The Force was actually out of balance. The dark side was more powerful than the light. Yoda and Mace said in the prequels that their ability to use the Force was diminished, and that was due to the Forc being out of balance.
In the Clone Wars tv show, which is canon, we see the Celestials, which actually maintain the balance of the Force. Here is the Wookeepedia entry.

Well, up until this point, the Light had been greatly more powerful than the Dark. Diminished though is also from their point of view. Maybe they were use to more ability than the balance allowed? The force didn't swing over to the Dark side until ROTS did it?

IMO, once he killed Palpatine, he eliminated both Dark and Light from any position of real power, which you could argue is balanced.
