How do we know this?

If we are going with music themes as the deciding factor, then Rey has to be a Skywalker. She had her own theme, but as soon as she force grabbed Luke's saber, his theme played.

I don't know how we know that either. It makes more sense that Sidious would have killed him sometime around when he took Maul as his apprentice, thus keeping the rule of 2. As far as the movies are concerned, the rule of 2 still applies.

I'm not sure if the ROTS novel is still canon, but when Palpatine is trying to convert Anakin to the dark side, he tells him that he was Plagueis's apprentice who killed him.

Right, but we don't know when he kills him. I think the other poster was inferring it was right before he became chancellor in RoTS, which would have meant he violated the rule of 2 twice, but there is no evidence that is the case.

Plagueis allowed Sidius to break the rule of two. He was cool with it. He was also cool with letting Sidius be the face of the Sith as long as he was left alone to study the force. As far as I can recall from the now non-canon books, Plagueis really didn't give a frick about much of anything other than studying the force deeper than anyone in thousands of years.

All books written after Disney bought Lucasfilms are canon.

Can someone explain the Anakin Skywalker, virgin birth, darth Plagueis thing to me? I must have completely missed that. I always thought Shmi was just saying his father knocked her up and left.

Darts Plagueis was written before. I don't think they are bound by that story.

I'm not sure if you are seriously asking, but I'll answer it anyway.
Darth Plagueis and his apprentice, Darth Sidious, spent months in mediation to shift the balance of the force toward the dark side. The Force reacted by impregnating Shmi to create Anakin, the chosen one who would restore balance to the Force. Anakin has no biological father.
Anakin did indeed bring balance back to the Force by killing Darth Sidious.

Nobody followed the rule of 2 anyway. Yoda was wrong about the rule of 2.

Man that's really dumb

Was this explained in the movies or the movie novels or what? I'm being serious, I must have completely glossed over this. Of course I only watched the prequels maybe 3-4 times.
I figured Shmi would have been a little more confused or been paraded around as a medical experiment considering she was the first virgin birth ever.

Who would believe her though? She was a slave on a desert planet, much easier to assume someone knocked her up and split.

They made it clear in Episode 1 that Shmi was impregnated by the Force and that made Anakin the Chosen One, which prophesied that the Chosen One would be born of the Force (no father - like Jesus) and would bring balance to the Force.
We know Sidious was Plagueis's apprentice - that is confirmed in canon. The Darth Plagueis book itself falls before the purchase by Disney, so is not technically canon. But the Force got out of balance toward the dark side somehow, and it is only natural that the Force responded by creating Anakin to restore balance. How the Force got out of balance is described in the Darth Plagueis book as I described and, while that is no longer technically canon, Disney has already proven they will cherry pick from the old books. I suspect Darth Plagueis and Sidious working together to shift the Force toward the Dark Side is considered canon at Lucasfilms headquarters. I would be surprised if it is ever addressed in another book or movie going forward.

We know for a fact that Anakin fulfilled the prophesy of the Chosen One, so working backwards, that means Shmi was telling the truth.

I didn't know much about the prophecy of the chosen one besides that he was supposed to bring balance to the force. They parroted "balance to the force" 300 times, but didn't give much more detail than that, that I remember.
