I know this will get downvotes but..
Thai food!
Traditionally gluten and dairy free and absolutely phuckin' delicious.
Easy to eat healthy without sacrificing flavor.

Thai here, too. Love rice, love sauces. Panang, curry, basil, spicy, sweet.

Mediterranean. I could die happy in a bed of hummus, doner kebab, shakshuka, feta, and all the rest.

TexMex gets a ton of downvotes because of Owl but I could eat a properly cooked slab of beef on a warm tortilla with some grilled peppers every damn day.

For me, it's a toss-up between Italian and the "Cajun/Creole" food I grew up on.
