I personally do not like any sauces with my steak but my in laws are psychos and like their steaks well done so I am trying to find a sauce that will help the dryness that comes with a well done steak. I love my in laws dearly but I just cannot understand grown people who like to eat shoe leather when it could be the most tender and juicy meat out there. I plan to do ribeyes. I am thinking of doing a beurre blanc sauce but am open to other suggestions. TIA

Ribeyes for you...something much cheaper for them. They don't give a shite about the quality of the meat anyway.

Agree with the A1 suggestion above.

Chimichurri is one of the best compliments to a steak IMO. I don't like sauce on a steak either but I will destroy some chimichurri if it's available.

Just make some. It's not hard.

Make a compound butter to put on the steak when its done cooking and hopefully it will impart some moisture back into it.

I usually make an au poivre, or a variation of that.

Peppercorns
Garlic
Shallot
Whiskey or Cognac
Beef stock
Heavy cream

This probably won't work since the steaks are well done and this relies on there being some juice collecting on the plate while it's resting, but I'll put it out there anyway.

I mix a very small amount of horseradish sauce, balsamic vinegar and a smidge of anchovy paste and put it on my plate while the steak is resting. Usually some juice collects under the steak while it's resting. When it's time to eat, I tilt the plate and mix that concoction into the steak juice.

I'm really talking about a small amount. No more than a teaspoon total. Maybe less. I just eyeball it.

The flavored juice becomes the "sauce" and it's delicious.

Why do you need a sauce? Do they typically put a sauce on their overcooked steaks? If not, just recognize that's how they like their steaks. Let eat the fry overcooked meat if that's their preference.

My wife is in the same category as your in-laws. Instead of burning a filet for her she gets hamburger steak and is just as happy!

Another vote for an au poivre. It's my go-to for leaner cuts like a NY Strip.

Horseradish sauce is pretty good.

I like variations of Meuniere sauce, but that is supposed to be for fish, but if you use Worcestershire in it, it goes well with steak.

You might also consider a mushroom sauce if they will eat that.

a sauce that will help the dryness

Koreans have a sauce called gireum jang (oil sauce). Traditionally, it's just toasted sesame oil and salt, but today I see it also has black pepper and garlic. The toasted sesame oil will add back some fat and help with the dryness, plus add a nice nutty flavor.
