What to do with Quail?

Never had quail before so I got some frozen quail at Kroger.
What is the best way to fix or season?

Shove half a jalapeno up its arse. Dust some seasoning on the outside, and throw on the pit.

Spatchcock, marinate in something like Italian Dressing, and grill under a brick or heavy pan.

My dad used to pen raise them, he had an incubator and would hatch them and raise to adult.
Some he would fatten up and they would get as big around as a softball, you talk about fine table fare.
He usually fried them in halves or whole like you would a chicken.

I eat quail a lot. You can do something as simple as salt, pepper, Tony's and a good olive oil and then add fresh herbs, like rosemary, thyme and basil. Cook on a hot grill for about 8 - 10 minutes, turning about half way.
Alternatively, you could slit the breasts, add jalapenos in the slits, wrap with bacon and grill. Probably need to grill about 15 minutes if you wrap with bacon.
We also stuff the quail (or buy it that way) with a crawfish stuffing. If we do that, we cook in the oven at about 375 for about 20 - 25 minutes topped with spices and butter or olive oil. Quality Seafood Market in Austin sells uncooked stuffed quail that are great in the oven.
Quail is one of my favorites.

I quail hunt all the time. Everyone gave you great examples on how to cook that delightful tasting bird. My favorite way is to toss them in something like avocado oil which is high heat oil, season them with whatever suits your fancy, and grill them over high heat. Only takes about 2 minutes per side. Quail is delicious.

Grew up with quail as a fairly regular part of our wild game meal. Best I remember my mom would dip them in egg/milk then season flour and deep fry. Quail is such a tender white meat you have to be careful to not overcook and dry it out.
