Airing dirty laundry is a poor choice. Maybe say you are remodeling and will take advantage of the down time to restore the customer service experience in order to respond to recent shortcomings. Take the blame, you own the business, then fix the problem. This is classless

My primary care physician did this last year with her office staff. New staff is 1000% improvement over the old staff.

But they will have to increase the pay to really make that happen if I had to guess.

TGIFridays used to do this many years ago, they called it a purge, but they remained open during the weeks long process.
