Worked for him in highschool/college.

Can be a complete a-hole

Can be a super nice guy

Sets high expectations for his staff

I worked for Uncle John at White oak Plantation and at the old Lafitte's Landing. I also graduated from CJFCI at Nicholls.
He has done and said so many a-hole things I cannot begin to count. I always found him funny in this regard, just because it's the way he is. He just talks shite constantly, it's rarely anything personal. The ole Grandpa's paddle story is pretty normal behavior that I've seen first hand. His knack for bullshite is why JF had the blue haired ladies buying into everything he said.
As a chef, he knows more than most and hires wonderful chefs to make him look great (which is a trait of every successful person). He is a cheap arse which is another trait of successful a-hole people.
The only time I was ever pissed at him was at Lafitte's one night. He and a group of impressionables were dining and drinking heavy. He showed his arse by going down to the kitchen, telling everyone how piss poor cooks they were and made a complete mess of the line. He was straight slinging food across the kitchen, then stumbling out yelled to clean this shite up.
Overall, I have really great memories of working in his restaurants. Mainly because of the people and experiences. Like I said before, there are tons of a-hole stories. Ever since my time in his employment, I see him as a businessman, not a chef. He is a shite talking showman who is smart (or cheap) with business.

Because his accent seems fake. He’s from down da bayou. I’ve been all over this state in every small town and nowhere in Louisiana do people talk like he does.

Yeah, he doesn't have a DTB accent but it does seem forced.

DTB is pass Larose/Raceland.

I have visited GRTs house personally, her spirited husband even thought I was a homosexual (borderline, not full homo) and hit on me.

He is a great man and wouldn't lie, chef John Folse is a PoS

I've met and talked to him three times. About 25 years ago, my GF and I wanted to eat at Bittersweet. I called up and it was booked. I called back, declared I was Doctor BrotherEsau and told them I was passing by and would be there at 8pm. Amazing the difference it made. Hostess said she'd seat me at the chef's table. We ate with Chef and about 4 other couples. Had a great fricking night. He kept the wine flowing well after dinner and we all got hammered.

About 5 years later, we walk into la crepe nanou and sit down. He was already there with a few people. Saw us come in, came over, remembered our names, said hello and we caught up for a few minutes. then he sent us a bottle of wine.

About 20 years after that, we ate at R'Evolution. Asked if he was in, and were told he was but that he had a cold and wasn't seeing people. Asked the server to tell him Esau and wife from 25 years ago at Bittersweet said hello and we hope he feels better. 5 minutes later he was at our table catching up again.

I think he's great.

Half of south Louisiana thinks of themselves as a great cook. If someone else doesn’t do it the way they do it they’re doing it wrong.
