My FIL hates him. Says he’s the biggest back stabbing, railroading son of a birch he’s ever met. He refused to allow us to use a John Folse book as the signature/sign in book at a wedding shower of ours.

He’s an abrasive personality, but a fantastic chef and cultural ambassador. The dude literally smuggled bibles into the Soviet Union and Communist China. A lot of people don’t realize he was sorta a spy for Pope John Paul II.

I’ve always thought it was more of a historical text than a cookbook.





It’s got some of the best pictures of Louisiana’s landscape of any book I have.

The Encyclopedia of Cajun & Creole Cuisine is better than After the Hunt imo.

I can believe this. His plant in Donaldsonville is one of our accounts and they have bad credit with our company. We have to collect payment on-site beforehand or we refuse service.

Have heard almost this exact story.


Dude is a dick. Stole some of my ex-wifes art work for some products he put out. Basically had her do some work and submit so he could see if he liked. He offered her a shite price and refused to budge. Then someone made a knock-off of the work.

Have heard stories for chefs who showed him the ropes in the early days. He had the right connections to bypass doing actual work so when it comes to the whole chef life thing he lacks a lot of talent.

There was a long thread on Folse years ago on F&D. I recall posts that were corroborated by others that said he had his apprentice and sous chefs do most of the work on creating his cookbooks, with no attribution.
