Gordon Ramsey is a prick in public but nice in real life.

John Folse is nice in public but a prick in real life.

He's also been very successful.

I had heard that about Emeril from my lazy brother-in-law who worked in one of his restaurants in college. My thought when I hear about a control freak, strict, a-hole of a chef is that I would trust eating there before eating at an easy-going, laissez-faire chef’s place.

The former Chef at Juban's in Baton Rouge worked under him. Did not have positive feedback from his experience with him. I have also heard that his catered wedding meals are lackluster and very generic, considering his namesake and all.

I actually worked with him at a television station years ago. Worked with him for about a month. Very nice guy. Maybe he’s changed.

I always consider down the bayou and up the bayou a direction. Like when explaining how to get somewhere, "Take 182 and when you get to the light go down the bayou."

I knew someone closely related to him, shared his last name in fact.

The person I knew said he was an A-hole and almost impossible to be around. That was long ago, maybe he's changed, who knows.

I have no first-hand knowledge, but I've heard he is an A-hole from several sources.

A friend of mine interviewed with his company right out of college. The lady doing the interview admitted that he was difficult to work for and had gone home in tears because of it on multiple occasions. (hearsay I know)

I heard years back that he had tasked students to turn in family recipes as part of their grade, those recipes later showed up as his cookbook. (again hearsay)

That's not really how it works. If someone hires you as a chef - you're a chef. You may or may not be a good chef but you're a real chef.
