My long shot theory is that he's sitting on both books currently, and let GoT run off and act as a focus group to weather ballon a different ending (without D&D knowing)
And he's written into his Will that both books will release upon his death and the craziest marketing campaign in history sees both books dominate the best sellers list in ways we've never seen.

Daemon fights and beats the Hand’s son then loses to Ser Cole.

His daughter is at the wall with her mother and Melisandre so my guess would be that Melisandre sacrifices her to bring back Jon Snow either with or without the Queen's permission.

They literally said in the episode “every time we fly over with dragons, they retreat into their caves”
That’s why they needed Daemon to be the bait that draws them out before bringing the dragons out
