Well, now y'all have made me put Six Feet Under as my next binge show.
Generally, if you love the show you'll appreciate the finale. I'm in the minority it seems as I thought the Seinfeld finale was good. How else do you end a show about nothing? I honestly have no idea what people were expecting that would have made it better than having all the people they screwed over or ridiculed get their revenge.
Anyway, my vote goes to The Americans for GOAT finale, MASH/CHEERS just for sentimental reasons tied for 2nd. Family Ties was an underrated finale too.
But the finale we never got that would have been an all timer was Hogan's Heroes. Was Mary Tyler Moore the first big series finale?

Star Trek The Next Generation. The last scene when Picard joins the poker table and says 'I should have done this years ago' shows how much he loved his crew. The whole two part episode is peak Star Trek.

Psych had a great finale. Shawn confessing to Lassie that he’s not really psychic, but Lassie ejecting and destroying the disc before he actually said the words was a fantastic way to wrap up that storyline.

Even though these finales were hated by many. I thought the finales of "Chuck" and Seinfield" suited the shows perfectly.

That’s one I think of often. Show went off the rails the last couple of seasons due to cancellation fears but I enjoyed the finale immensely.
If I remember correctly, they wrote 4 or 5 endings that they had to write themselves out of when the series got picked back up.
I’m also fond of Parks and Rec. It has understandable comparisons to the office, but it ended up with you mostly being happy for every character.
