It all started because people were poor and did not have food, so they would go around to neighbors and ask for food/livestock/ingredients. Since they were their neighbors, they would wear masks and hats to hide their faces since they were embarrassed to have to beg. They also did not want to just be given these items, so they would perform dances and sing music in exchange. At the end of the day they would take their newly acquired goods and make a large dish to share with everyone, usually a gumbo.
