We could still add a defensive coach - safeties or DL/LB. Or, a wildcard like bringing back Decoster as TE coach or Callaway promoted to QB coach. It's offensive heavy, but Decoster could come in and work with TEs and OL in 2021 and possibly take the OL job in 2022.
I think your breakdown is very plausible. Coach O can be a 4th coach to help out with Individual Defensive drills, maybe give work with the DE's and the DL coach work with DT's, etc.
I like Callaway getting on the field, you can work him into the offense and have someone to move up internally to at least PGC say if Peetz gets a NFL OC gig, and Mangas moves up to OC, etc.
