It has a roux, and it has stock, and you’re not stewing meat down. Gumbo is a soup. It’s always a soup, regardless of the ingredients. It’s the process that makes it a soup, not the ingredients.

I'm a North La. redneck and can't make roux to coonass standards. Just use store bought Savoie's Dark roux. Recipe is on bottle and much better than mine. Okra is not included in their recipe but I brown okra in small amount of oil to deslime. My river rat wife taught me that. I use 1 quart less water than called for. Even a NY Yankee can make good cajan gumbo with this recipe and roux.

Okra is okay for gumbo...I just don't care for it personally. I have a rule...if I've thrown it up...I typically don't eat it. I can eat okra fried...but not anything like in a gumbo or boiled...I've thrown it up too many times when I was a kid. Love all gumbo...except that with okra...Lord knows I've cut enough okra in my life from my grandpa's garden...I just can't eat it.

I don't get putting shrimp in a chicken & sausage gumbo. Some people like it but to me it is trying to combine 2 different types of gumbo. To each his own.

I fry my okra with a small amount of oil till they start browning. Put them in my gumbo,cook awhile longer. Chicken Sausauge Okra gumbo, no slime.

We would sometimes throw a couple of sliced boiled eggs in the pot of gumbo or shrimp stew second day when the seafood is getting sparse, but there is still some roux left over. Not just a Lafouche thing

Chicken, Sausage, & Okra gumbo is my favorite. Roux must be dark. I like Seafood Gumbo but the Chicken and Sausage is it for me. I always have garlic bread made from Reising's or Leidenheimer's french bread. Awesome.

We grew up eating sweet potatoes in our gumbo. If not, potato salad on the side. Chicken and sausage good, shrimp/seafood better if it has the stock added in.
