Curious why you only mentioned the Yukon and not the Tahoe/Suburban?

If you’re having 1 or 2 kids, get the Yukon. If you’re planning on more, get the XL.
We have a 17 XL and it’s ok. Miss our Lexus GX but needed more room.
In a few months the new style Yukons will be our and you can either have the nice new one or get great deals on the 2020s.

My wife has 2015 yukon xl. it is awesome. we bought it a year old with 15k on the odometer. it is just about paid off now, but i am so happy we went with the xl. there is tons of room for the kids, and we have a huge cargo area that is awesome. We have taken it on several long trips. the ride is fantastic. we do not regret the high price tag one bit. I would recommend getting one with some miles on it to save money. You might be able to find new ones with good rebates once the new body style is released ,should be any time now

I have one kid and I bought a Tahoe without the 3rd row seats. They’re useless to me. No one needs to sit back there. We’ve driven this thing all over the place the past 3 years and it’s serves us well. I thought I’d miss my truck but it’s quite the opposite. I don’t know if I’ll go back to a truck.

Either the 5.3 or 6.2 will run like a spotted ape.
Just be aware that after a few years, the dash will have a large crack, and the interior and exterior door handles will be held together with zip ties and duct tape.

The 5.3 doesn’t seem overly responsive in my dad’s 2018 Silverado. Kind of sluggish.

I couldn't imagine driving the suburban version of a short bus around. I had an Xterra and that's as big as I'll ever go.

XL has cargo space the other one doesn't. The third row in the non XL has the floor board above the axle which means only kids can sit back there. In the XL even adults can ride back in the third row for short trips.

If you live in suburbia or in a rural area, the larger vehicle (XL) is just fine if you need more space. Otherwise, the extra length is a headache and probably overkill.
The Yukon is a very good vehicle with excellent reliability - and they can tow very well if you need to. You've made a choice.
