There is no money in it for them. It's why you rarely hear of the police busting a meth lab. It actually cost them a considerable amount of money to break down a meth lab. They have to call in hazmat crew to dismantle the lab and destroy the chemicals used to make meth.
They would much rather go after people with cannabis. Cannabis is far less dangerous and they can seize much more money through asset forfeiture laws.

Yes, they would know which drugs were present, but doing a purity test requires costly equipment that the lab may not even have.
Either way, its likely that the law is written that any compound which contains fentanyl counts as the full weight as if it were all 100% fentanyl.
