Hyphenate? No, because that's pretentious nonsense as far as I can tell.
Keep her own? Yeah, sure. In fact, before my wife and I got married I straight up asked her if she wanted to. it wasn't some "progressive move" on my part but one that I was genuinely asking. Even though my last name represents only a portion of my ancestry I could not have imagined dropping it and taking someone else's name. So, I asked her.
Turned out she was eager to do so, so that was that...but I'd have been fine had she wanted to keep it and would have not taken it as any slight to me at all.

What if it's not a hyphen. But you both combine your last names to create a new name and clan offshoot?
So a Bigly and Judds become the Bigjudds or a Wiener and a Smith become the Weinersmiths.
