Why don't you just deal with the issue. Instead of bitching about it on a message board tell them both that you aren't happy bout them using the name your wife and I had picked out, but you are pissed that they would even have the nerve to ask for all the monogrammed stuffed. Make it known that there is no way in hell they are getting it either. Family or not, sometimes you have to be a fricking dick to deliver the message. i bet if you call them out on their douchey behavior they will back down and pick a new name.

You know what you should do, get a dog this week (an old ugly dog if possible), name the dog that name, take 100000s pics of dog, put it all over facebook, send out announcements in the mail with the dog pic and name, blast it out there. They will change their mind. You can get rid of the dog after their kid is born and named, and still use the name later, if you can forget about the old ugly dog.
