I rarely get in on this, but this is trashy to me. Why would you want someone's seconds? Especially since people already saw the monograms and whatnot from y'all. Weird shite.
I don't know that I'd be "angry" (never been anywhere near a situation like that), but I think you should turn up your nose and laugh internally at their fixation on your sloppy seconds and then move on with your life.
What you do with the stuff is up to you, but burning it would make you look weak. Just tell him no he can't have it all. It isn't up to him to decide what y'all still need, and it would be pretty funny if you just say, "No, we still plan on using it". He won't know if that means you still plan on having a baby and using the name.. or what.

If this happened to my wife, she would go ballistic. Pretty low class move from your Brother in law. I would confront him on it and see if he agrees to make some changes. You don't want to destroy family ties but this is ridiculous.

The name thing would annoy me but I could probably get over. Them choosing the name and following it up by asking for all the monogrammed stuff or choosing the name with the intention of asking for the stuff would really piss me off. Tell him to frick off.
