As corny as it sounds, I am close to having my dream career. If I wasn't doing this job, though, I would love to be a successful novelist.

My knee jerk is always to say some sort of adventure guide (climbing, mountaineering, diving, ski diving et al) but then I remember I did that during college and grad school and it actually gets old pretty fast. While you are outdoors kinda doing something you love you are really shepherding adults that are acting like kids at the zoo.
I think my answer is automobile journalist. You get to flog the shite out of other people's cars on and off the track. More specifically I would like to be a YT car guy in the vein of Schee150. From the outside that dude is living the life if you are a pretrol head.
