Shortly before I got to my current job there was a fella that use to bring in brisket for everyone. This dude quit his job to sell Brisket plates and sandwhiches. Now he works 2 days a week, preps on Thursday and sells them on Friday. Typically hes done for about 1 or 2 on Friday.
ETA; One of my other buddies sells closet and garage organizers in Houston part time, he gets 10% of the job. Last time I talked to him the job he was working on was for some weathly family, his cut was going to be $34,000. Most 3br/2ba houses he makes about $1000 and he does a few of those a month. I never knew there was so much money in closets.

If you can travel on 2 days notice, Independent Catastrophe Claims Adjuster or contract FEMA disaster inspector.
Claims adjusting makes 70-200k depending on how many major storms. Last couple years they could make 200k without leaving Louisiana. They get paid 300-500 per claim. Good experienced adjusters can close 10-15 claims a week. If there are no major storms, you can go work for a big insurer doing day to day claims once you have experience and make 50k.
Doing FEMA disaster inspections requires less skill and is a bit easier to get into. They just document the damage and don't determine the pay out. You can make 5-6k a month while deployed. You can also indicate which months you are available. They make 30k-60k a year, but if there are no disasters, you need a fall back.
I know a guy who does FEMA inspections and he got sent to the US Virgin Islands for 6 months. They paid for his hotel which was a resort and he got a $91 per diem on top of $40 per inspection. They get 6-10 inspections per day.
FEMA inspectors get travel, hotel and per diem on every deployment. Independent adjusters have to cover all expenses themselves. Many have RVs that they live and work out of.

Here's one idea - look up Catastrophe Claims Rep Training - these people travel around after storms and do insurance claims for companies.
They make decent bank too -

If you are post kids looking for a new job some sort of traveling gig like this where they send you all over would absolutely be something I’d consider.
Tons of jobs out there for someone that can leave on a short notice.
