The air show is August 10-11. Always fun to watch from Oak St Beach or North Ave Beach. They will do a practice show Friday the 9th

Their science museum is pretty cool . Also, their Hop On, Hop Off bus will take you around town.

The Harley museum in Milwaukee is badass.
The Midwest is muscle car fantasy land- they have all winter to work on their projects.
Great Lakes Dragaway (no idea why they spelled it like that) is a great little grassroots track near Kenosha, WI. They race every Wednesday, I think- check it out b/f you go.
All of this is 1.5-2 hours from Chicago.
Good day trip- Go see Harley in Milwaukee, check out the racing on the way back.
ETA- I just looked, Great Lakes is racing every night now, except Mondays. It’s a badass place.

I'll add the chorus of Museum of Science and Industry (MSI, or "Museum of Science and Projects" as my son called it when he was little).
I think you need tickets in advance for the U-Boat - DO NOT MISS IT! Check out the "Whispering Gallery" it is so cool -

While Field Museum and the Art Institute are awesome, kids that age are gonna be more aligned with MSI.
If you want something off-beat and weird, and your kids might like it, try the Surgical Museum - LINK
I don't think anyone mentioned - get some REAL Chicago-Style hot dogs. Not some hot dog at a museum or mall, gotta be one of the many authentic places (just google for one near where you are). All the condiments, including celery-salt, a must (kids could skip the hot 'sport' peppers if that's not their thing, but far better with). And you DO NOT PUT KETCHUP on a Chicago dog. Honestly, it just ruins the blend of flavors, it's hard to explain.
And before anyone jumps in, there's no issue with ketchup on a 'regular' hot dog, if that's what you like. But if you put ketchup on it, it is NOT "Chicago Style", that's all. Ketchup is just too sweet for the other spices, it knocks the whole thing out of whack.
