You couldn’t do this in Louisiana because it’s too humid. The most important part of the AC is the dehumidifying. Continually keeping it that high will make your walls damp and will easily let mold grow.

Does 78 degrees indoors in the Deep South feel exactly the same as 78 degrees in, say, New York?
I imagine the higher humidity would make a similar temperature more miserable in the South.

To a point...in very dry climates adding humidity can make the temperature "feel" cooler...lot of swamp coolers still being used around the world.

swamp coolers work due to evaporative cooling.... as water evaporates across the wet fins as the air flows across, the air is cooled. so you are making the air cooler and no longer comparing the same feel of air temp dry vs wet
dry air will feel cooler as it holds less heat capacity (water vapor has the heat capacity)
